No doubt you’ve heard the news suggesting that when it comes to cancer, eating cured and processed meats like sausage, deli meats and bacon ranks right up there with smoking and in the same category with alcohol and arsenic. The consumer fallout ranges from anger over one more thing to avoid… to disbelief …to fear…wondering just what IS safe to eat. What do you tell your patients?
The International Agency for Research on Cancer (IARC), the cancer agency of The World Health Organization (WHO) evaluated the carcinogenicity of consuming red and processed meat from 800 studies.
As a result, they classified the consumption of red meat as probably carcinogenic to humans, mainly for colorectal cancer. Processed meat was also classified as carcinogenic and said to cause colorectal cancer when a 50-gram portion (think small hot dog) is eaten daily.
