When pressed to give someone quick and basic advice on eating better I always suggest getting more vegetables into their diets. Easier said than done for many people, especially when they are sensitive to some of the bitter compounds naturally present in veggies.
An easy solution is start them off by roasting a bunch of vegetables. The dry heat of the oven caramelizes the natural sugars in them, which brings about a rich depth of flavor. It’s so easy to do and you can make enough to last a few days.
